We recently had our final pop-up at Edinburgh Farmers’ Market.  It was a wonderful end to what’s been a hugely enjoyable, inspirational and rewarding series.  The limitations of our field kitchen and the use of produce sourced only from the market (and a few things we foraged when visiting suppliers) has made us really think about what we cook and how we cook it - a process we’ve really enjoyed.   We’ve also met so many passionate people who really care about what they produce, learnt a phenomenal amount about what goes into growing and farming some of Scotland’s finest produce, and cooked for many lovely, appreciative people.  Here is the menu from the final pop-up:

Isle of White Tomatoes, Leaves, Toast and Virgin Mary

-

Seaweed-smoked pigs’ cheeks and clams

-

Seaweed, lemon and sweet-cicely tart

Although that was our last market pop-up we have a few things planned between now and opening, including an appearance at burgher burger, a masterclass at Hopetoun and a pop-up in a yurt at a festival.  Be sure to sign up to our mailing list for details of these and other events.
